It's BBQ season!

Did you know that liquid nitrogen can be used in culinary creations? You're probably familiar with it's use in making ice-cream and for it's freezing properties in desserts, but what about cooking? We made some burgers using sous-vide, nitrogen, deep fry & a final finish on the grill. The result is a burger that doesn't lose any moisture and browns the outside without over-cooking the inside.
